Home made Gluten / Grain Free Vegan Pad Thai with Peanut Sauce
This is dairy free and grain free! If you’re paleo just use another nut butter instead of PB! I’m sure this is just as yummy with either cashew or almond butter. Or go wild and use a combination.
This recipe is super easy, you just need to have a few staples in the cupboard and fridge and you can always modify it with different veggies if that’s what you have available. For example use sweet potatoes instead of the courgettes, or green onions over red. Whatever you prefer.
First, I sauteed red onion, lots of chopped ginger (roughly a tablespoon) in a saucepan using whatever oil I had around. I then added a chunk of coconut paste (concentrated) and some water and cooked it down. In a separate bowl I mixed Gluten Free Soy Sauce (you can get use Coconut Aminos if that’s your preference) and about a heaping tablespoon of peanut butter and made a paste. In the meantime I added a couple tablespoons of red curry paste to the existing saucepan and mixed in. Add more water as needed to keep it saucy! Then I added in the soy/PB mixture so its nice and creamy. I used my spiraliser to make zucchini / corgette noodles (aka zoodles) and mixed into the sauce. I pulled out the soaked noodles with tongs so I could use the remaining sauce for the family’s meals.
I sprinkled some fresh coriander on top and garnished with roasted sesame seeds and spiralled carrots. For the family I used the remaining sauce with their rice noodles. So easy and tasted as good as any restaurant!
